The predecessor of Noboritei Ginza is an eel wholesaler that was founded in the Edo period (1837) and still operates today. To eliminate the complaints of people who dislike eel because "eel bones get stuck in their throats" and those who "can't feed eel to children because there are too many small bones," our Ginza store offers eels that have been "boneless" by our chefs so that all customers can eat them with peace of mind. Even experienced chefs cannot remove all the small bones, so please be careful when eating eel. We use 100% domestic eels.
